Lilikoi vinaigrette is the perfect dressing for your favorite salads. Slightly sweet yet tart, vibrant yellow goodness made for drizzling and adding a little pep to your greens.
This vinaigrette will make any plain salad better. Make it ahead of time and store it in the refrigerator to have on hand at all times.
If you take this to your next get together don’t be surprised if you don’t have any leftovers to bring home.
But what is a vinaigrette you might ask?
A vinaigrette is a mixture of oil and something acidic like lemon or vinegar. In this case I use lilikoi.
What are liliko’i?
Lilikoi is also known as passion fruit. It’s commonly grown in the tropic and subtropic regions. It has a tough, bright yellow to dark purple shell. Inside you’ll find a yellow pulp with many black seeds.
Lilikoi vinaigrette ingredients
- 1/4 cup lilikoi juice
- 1/4 cup avocado oil
- 1 tablespoon honey
- 1 teaspoon dijon mustard
- salt and pepper to taste
This recipe is adapted from Fix Feast Flair. Check her out blog and cookbook for other yummy island foods.
My vinaigrette separated in the jar, is it still good?
Yes it is. The difference in weights of the ingredients will cause it to settle over time. Not to worry. This is normal. All you need to do is shake it up again to blend.
How to store lilikoi dressing?
This dressing is best stored in a closed container in the refrigerator.
How long does lilikoi vinaigrette last?
This salad dressing will last about a week if kept in a closed jar in the refrigerator.
What to serve with lilikoi vinaigrette?
Lilikoi vinaigrette is most commonly used as a salad dressing. Pour it over a spring mix, spinach, mixed greens, or really any salad of your choice. Another great option is to use it as a marinade. Soak your favorite cuts of meat to add a little sweet yet tart flavor.
