Ingredients
- 7 oz shrimp (100g per 3.5 oz) raw, peeled and deveined
- 1 spray Coconut Oil Spray AP
- 2 tbsp chipotle peppers *chopped, from a can of chipotles in adobo sauce - AP
- 1 lime juiced - AP
- 1/2 tsp salt
- 2 tbsp tomatoes diced
- 1/4 cup water
- 2 tbsp Greek yogurt fat-free, for topping
- cilantro finely chopped, for garnish
- lime wedge for garnish - AP
- 2 cups cauliflower rice AP

Instructions
Add the chopped chipotle peppers, lime juice, diced tomatoes, salt, and water to a small blender or food processor and blend until smooth.
Heat a large skillet over medium heat with 1 spritz coconut oil spray (AP).
Add the shrimp to the pan and sauté for 1-2 minutes, until lightly pink.
Stir in the chipotle sauce and simmer for about 5 minutes, until the shrimp are cooked through and the sauce has thickened slightly.
Serve over steamed cauliflower rice.
Top each bowl with a tbsp of Greek yogurt and garnish with finely chopped cilantro and a lime wedge.
Recipe Notes
*ONLY if the ingredients include no sugar. If not, substitute 2 tsp dried chipotle powder.

Yay I’m so glad to hear this Carolyn! I’m such a visual person, I just really wanted to create something that would make hCG seem like a punishment and more like a decadent elegant creative thing to be doing instead. Would love to hear how things end up tasting for you with the ones you try.

Hi, first and foremost, I love this recipie. It is my diet saver. However, can you tell me the calorie count of just the sauce? I made a large batch to use with shrimp and shredded chicken and am trying to figure out the calories. Thanks!

Hello! So glad you loved! Yes certainly- so for the sauce (chopped chipotle peppers, lime juice, diced tomatoes, salt, and water) for 2 servings = 38 calories, or 19 calories per serving. I hope that helps!

Do you buy cauliflower rice? Or do you make it?

You can do either- many grocery stores do have premade cauli rice now, but it’s also easy to make in a food processor – just put the chunks of raw cauli in, and pulse a few times till it’s the desired size. You can also freeze the raw cauli rice if you want to batch make it!
