When it comes to weeknight meals in my house, they need to be quick, easy and delicious. That's why today's recipe is homerun for my family.

If you are new to the world of Instant Pot cooking, you'll want to check out our Instant Pot Guide. Basically, an Instant Pot is a pressure cooker that cooks food quickly using steam and pressure. While Beef Chili can take hours on the stovetop, you can make it in under 60 minutes in your Instant Pot!

Ingredients

Here is what you will need to make this recipe:

  • ground beef
  • canned diced tomatoes
  • onion
  • coffee
  • garbanzo beans
  • pinto beans
  • kidney beans
  • taco seasoning
  • garlic

Note: I like to use my own homemade blend of taco seasoning, but store-bought works just fine, too.

Instructions

  1. Set your Instant Pot to the Sautee setting and brown the meat, onions and garlic together, breaking the meat into little pieces.
  2. Pour on the drained beans, tomatoes (including the liquid) and taco seasoning, stir well for about 1 full minute and then twist on the lid. Make sure the valve is set to sealing.
  3. Cancel the Saute setting and then select Manual for 20 minutes.
  4. When the pressurized cooking time has ended and the Instant Pot beeps you can let it natural pressure release (if you won't be eating right away) or you can carefully cover the valve with a damp clean cloth and release the pressure.
  5. Stir everything together and allow as much of the steam to escape as possible. This will help thicken the chili quite a bit.
  6. Serve with your favorite toppings.

Note: The sautee setting is always your friend when trying to cut down on the total start to finish time!

Recipe Variations

While we have not tested these variations, you might enjoy one of these modifications to our recipe:

  • Add 1 cup of diced green bell pepper to the pot and saute with the onions.
  • Adjust the spiciness of your chili by adding a pinch of red pepper flake, or a dash of hot sauce.
  • Substitute ground pork or chicken for the beef for a leaner version.
  • If you prefer one kind of bean over another, you can adapt the recipe by using whatever combination, as long as you include the same overall quantity.

How long does Beef Chili last?

This is fantastic for about 5 days in the fridge or it can be transferred to an airtight container and set into the freezer for about 2 months. (Remember to label your container!)

  • 1 pound 90% ground beef
  • 28 oz can of diced tomatoes
  • 1 large onion, diced
  • 10 oz brewed hot coffee
  • 1 15oz can of garbanzo beans
  • 1 15oz can of light pinto beans

Notes

Instant Pot Tips

  • Just like any recipe, read through the entire thing before you begin making your Instant Pot recipe and follow the recipe as written.
  • Cut your meat and/or vegetables into uniform sizes so that they cook evenly.
  • Do not overfill your cooking pot.
  • Take care in where you place your pressure cooker, keeping in mind where the steam will vent. It’s never a good idea to keep it underneath wooden cabiniets.
  • To keep your Instant Pot in good working order, you’ll want to replace the silicone sealing ring every 18-24 months because they stretch over time.
